This varietal’s average age to maturity is 14 years. It is important to know both the local and botanical names for each plant. The reason being that Largo is only the local name in Minas; in other parts of Oaxaca it is called “Cirial” or “Tobasiche”. “Largo” or long as name implies, perfectly describes the shape of this maguey, though uncommon wild Largo can grow to be almost 7 feet tall. To produce 1 liter of mezcal we require and average of 21.5 kilos of this maguey (maguey).
