100% Wild Cuishe (Agave Karwinskii) This Karwinskii varietal grows wild in the Zoquitlan region of the Sierra Sur, Oaxaca, and has an average maturity of 9-12 years. Karwinskiis are very tough and fibrous agaves with low sugar content. The locally named Cuishe is distinguishable from Madre Cuishe its taller height and narrower trunk with their leaf structure starting at least a foot above the ground.

The Cuishe in this area appear to be more closely related to the agaves commonly called “Largo”, “Tobaziche” and/or “Cirial” in other communities. On average, Cuishe yields 800-1,000 liters of mezcal from 12 tons of cooked Agave Karwinskii (~36% lower yield than Espadin).
