Barril as it is called in the Santa Catarina Minas region is also known as “Barril Amarillo”, “Barril Verde”, “Barril Blanco” (Madre Cuishe in Ejutal and Miahuatlan). The Karwinskii family may be the most biologically diverse species of agave, and as result, has multiple unclassified subcategories. This particular varietal averages 15 years to maturity and has a relatively low yield when combined with clay pot distillation. It take us approximately 15.9 kilos of Barril (depending on the time of year) to produce one liter of mezcal.
