History

The Caballito Cerrero “The one that doesn’t need horseshoes” was created in 1950, by Don Alfonso Jimenez Rosales, when he separated from Tequila Herradura, a company of which he was a founding partner, elaborating it in the Santa Rita factory built in 1873 by his father-in-law Maximiano Hernandez Orozco, his son Claudio continued to produce tequila Caballito Cerrero until his death and it is not until 2018 that his descendants (the 15th generation of “vino mezcal” producers) took the decision, under the premise of always respecting the values of the agave and maintaining a full identity, to cease the use of the word tequila in order to produce “Caballito Cerrero” as an agave distillate.

The Jimenez family maintains absolute respect for the quality of the 100% agave product that they produce, using only mature agaves and of the Amatitán region, having productions with Blue Agave Tequilana Weber and with Agave Angustifolia as their ancestors did.

Caballito Cerrero is the result of the knowledge acquired by the Jimenez family through fifteen generations of producers of vino mezcal, tequila and agave distillate, the geographical conditions of the Santa Rita factory and the effort of a family to stay true to their convictions and traditions. 

SANTA RITA

The Santa Rita factory was built in 1873 by Maximiano Hernandez, whose ancestors were dedicated to the elaboration of “vino mezcal” since before the conquest (1521). Currently, Santa Rita continues to be owned by their descendants so there are already fifteen generations producing “vino mezcal”, today Destilado de Agave.

Santa Rita was designed to work based on gravity, it has different levels, it also has a natural spring with water entering the factory through an aqueduct that goes inside wide stone walls. This water, as well as the biodiversity and climate of the ravine where Santa Rita is located, provide characteristic elements to the unbeatable taste of Caballito Cerrero.

LA BARRANCA DE TECUANE

It is here where the vestiges of the various distillation sites (tabernas) of vino mezcal – tequila are found: “La Miniatura”, “La del Mantial,” “La del Salto”, as well as, “La de Cielo Abierto” which historians estimate is from the XVI century and the factory “Santa Rita”; producer of vino mezcal”by Maximiano Hernández and today of Caballito Cerrero.

The fields and slopes of the ravine are shared between the fruit trees and the agave fields of the Azul Tequilana Weber and Angustifolia varieties; it is in this ravine where the agave used to produce Caballito Cerrero grows.
